Maque choux, pronounced ‘mock shoe’, is a traditional southern Louisiana braised vegetable dish containing corn, onions, peppers, and tomatoes. This recipe contains cream and sweet onions.

Sweet Corn Maque Choux
Ingredients
  • 3 tablespoons vegetable oil
  • 3 cups fresh sweet corn
  • 1/2 cup diced sweet onion such as Vidalia
  • 1/2 cup diced red bell pepper
  • 3 to 4 cloves garlic minced
  • 2 cups heavy cream
  • 1 cup diced tomatoes
  • 2 tablespoons chopped parsley
  • 1 tablespoon fresh squeezed lemon juice
  • Salt and pepper to taste
Instructions
  1. Heat oil in a large rondeau. Add in corn, sweet onion, bell pepper, and garlic. Cook over medium heat until the vegetables are tender, but do not brown.
  2. Add in the heavy cream, tomatoes, parsley, and lemon juice. Season to taste with salt and pepper.
  3. Bring to a soft boil, then reduce the liquid by half.
  4. Adjust seasoning if necessary, then serve.
