Cipollines are small, flat onions that originated from Italy. They are found in most supermarkets, and any small onion may be substituted.

Sweet and Sour Cipollines
Ingredients
  • 1 pound cipollines
  • Water for boiling onions
  • 3 tablespoons extra virgin olive oil
  • 2 bay leaves
  • 2 tablespoons red wine vinegar
  • 1 to 2 tablespoons sugar
  • Salt and pepper to taste
Instructions
  1. Trim the ends and tops off of the cipolline onions. Cook the onions in boiling water until just soft, about 5 minutes.
  2. Drain immediately, and then peel them.
  3. Heat the olive oil over medium low heat, and add the bay leaves. Cook for a minute, just until fragrant. Add the onions and continue cooking just until they are lightly browned, about 7 minutes.
  4. Add in the vinegar, sugar, and salt and pepper. Continue cooking until they begin to caramelize, about 2 minutes.
  5. Remove the bay leaves, and transfer the onions to a serving platter. Pour any juices over the top.
  6. Serve at room temperature.
