Original Baked Macaroni and Cheese
Ingredients
  • 1 stick butter
  • 6 tablespoons all-purpose flour
  • 1/2 teaspoon cayenne pepper
  • Salt to taste
  • 3 3/4 cup warmed milk
  • 4 cups sharp cheddar cheese
  • 1 pound macaroni cooked
  • 1/2 cup heavy cream
  • 1/2 cup fresh bread crumbs
Instructions
  1. Preheat oven to 350 degrees F.
  2. Melt the butter over medium-low heat in a heavy stainless steel saucepan. Remove 2 tablespoons to a small dish and set aside for later. Whisk in the flour, and cook for about 4 minutes, stirring constantly. Add in cayenne pepper, and salt to taste. Whisk in the warmed milk in parts, whisking until smooth. Stir over medium heat until the sauce thickens. Reduce heat to low, and add in 2 cups of the shredded cheese. Stir until melted. Remove from heat.
  3. Place the cooked pasta in a large mixing bowl. Stir in the cheese sauce.
  4. Layer 1/2 cup of the shredded cheese in a buttered 8x11 pan (9x13 will also work, or any large casserole dish). Layer one third of the macaroni mixture over the top, then top with 1/2 cup of the cheese. Repeat process, ending with cheese.
  5. Pour the heavy cream over the layered macaroni and cheese.
  6. Add the bread crumbs to the reserved melted butter and stir to coat them. Top the macaroni and cheese dish with the buttered crumbs.
  7. Bake until there is a nice golden crust on top of the macaroni and cheese, about 30 to 40 minutes.
