Hot Tomato Grits
Ingredients
  • 2 slices bacon diced
  • 1 14- ounce cans low sodium chicken broth
  • 1/2 teaspoon salt
  • 1 cup quick cooking grits
  • 2 to matoes peeled and diced
  • 2 tablespoons chopped canned green chiles
  • 1 cup shredded sharp cheddar cheese
Instructions
  1. Cook the bacon in a heavy pan until crisp. Drain fat. Add in the broth and salt, and bring to a boil.
  2. Stir in the grits, tomatoes, and chiles. Return to a boil, and then reduce heat.
  3. Simmer the grits 15 to 20 minutes. Remove from heat.
  4. Stir in the cheddar, and cover the pot. Let stand 5 minutes to melt the cheese.
  5. Serve.
