German-Style Hot Potato Salad
Ingredients
  • 2 pounds yellow potatoes peeled, quartered, and cut crosswise into 3/4 inch pieces
  • 1/2 pound Polish kielbasa cut into 1/4 thick slices
  • 1 onion chopped fine
  • 1/2 cup white vinegar
  • 1/2 cup beef broth
  • 1/3 cup minced fresh parsley
Instructions
  1. Steam potatoes for 10 to 12 minutes until they are just tender. Transfer them to a mixing bowl.
  2. While the potatoes are steaming, fry the kielbasa until golden, then add in the onion and cook until the onion is browned.
  3. Remove from heat and add in the vinegar and broth, slowly at first to prevent bubbling. Return to heat and bring to a full boil. Cook until the mixture is reduced to about 2/3 cup, scraping the bottom often to remove any browned bits.
  4. Pour this hot mixture over the freshly steamed potatoes.
  5. Toss with parsley, and serve.
